Does anyone know whether I would need to change the ignition capacitor on my 1961 ES2 when doing the conversion to 12 volts? I cannot find any literature relating to the relationship between voltage and capacitance.

You do not need to change the cap.
They are generally 400-600v rated and would function pretty much the same and deal with the same voltage levels weither a 6 volt or 12 volt coils.
